Steve's Applesauce Cake Bars

Here is another easy recipe, this one is to help with my cravings for baked goods. I altered this one slightly from a recipe in one of my cookbooks to a smaller serving size and simpler to remember.

Preheat oven to 350°
Grease and flour 11" x 7" baking dish using non-stick spray
In a large mixing bowl

1 cup All-Purpose Flour 400 calories
1 cup Granulated Splenda (Measures same as sugar)
1 tsp. Cinnamon
1 tsp. Baking Powder

Mix dry ingredients then add

1 1/2 cups Unsweetened Applesauce (Mussleman's) 150 calories
1/2 cup Eggbeaters 60 calories
1 tsp. Vanilla Flavoring
1 tsp. Apple Cider Vinegar

Mix thoroughly and pour into baking dish and put into oven for 50-55min.

Let cool
Spray top with butter flavored non-stick spray and sprinkle with cinnamon and Splenda
Cut into 12 bars @ ~50 calories each

My Diet Pizza

   There seems to be a lot of people interested in my "diet" pizza. I have been working on it over the many years of trying to lose weight as a way to satisfy my cravings for pizza, my need to feel full after a meal and the desire to keep the calories down to a level that doesn't feel like cheating. The current incarnation is very easy to throw together and I have been known to create the entire pie from "scratch" in less than a half hour.

Here is Steve's Diet Pizza Recipe!

Place pizza stone in oven (can be made with pizza pan also)
Preheat oven to 500°
 Crust

Lay out a sheet of aluminum foil approximately 16" x 12"
Spray foil lightly with non-stick spray
In Medium bowl mixed together
   1 C. All Purpose Flour 400 calories
   1 tsp. Italian Seasoning (McCormicks)
   1/2 tsp. Sea Salt
   2 tsp. Dry Yeast (Red Star)

Add Hot tap water slowly, while mixing with hand, until a ball of dough forms. I continue adding water until starts to lose the ability to hold its shape. Some experimenting may be necessary.

Place ball of dough onto foil and allow to rise. This dough will usually double in size....if you can wait hat long....

Toppings

EDIT: After more experimentation I've come up with a better pizza sauce. I pour out about 1/4 of the can and then add to the remaining sauce
1 tsp. Fennel seed
1 tsp. Dried chopped onion (seasoning section)
1 tsp. Splenda or sugar
Let sit while dough rises and sauce will thicken.

While dough rises it's time to prepare your toppings. Since toppings are personal preference, I'll share the ones that work for me while keeping me on my diet. These will be in the order I place them on the pizza.

*(see edit above)* 1/2 - 8oz. can of Tomato Sauce (Contadina) 25 calories
2oz. - Shredded Italian Style Cheese (Great Value) 160 calories
As many Sliced Baby Bella Mushrooms as I can fit, about half of a small package. ~30 calories
One thick slice of a Red Onion coarsely diced. ~10 calories

EDIT: Have had good luck replacing turkey with Hormel real bacon bits!

Three slices of Smoked Turkey lunch meat (Great Value) Diced and placed in a mixing bowl with the following spices. I never measure these, so I'm guessing 1/8 tsp. of each
   Coarse Black Pepper
   Sea Salt
   Sage
   Ground Savory
Then mixed by hand until all the turkey is separated and evenly coated. 60 calories

2oz. - Shredded Mozzarella (Kraft) 160 calories
1/2 small can of sliced Black Olives. 50 calories

Assembly

Spray dough lightly with non-stick spray and spread dough out on aluminum foil by hand into ~12" round pizza leaving a slightly raised edge.

Add Sauce and spread with spoon to cover.
Add toppings one by one.

Carefully slide pizza peel (I use a thin plastic cutting board) under aluminum foil and transfer to pizza stone in preheated oven. Have had similar success with putting on a pizza pan and placing into oven.

Bake @ 500° for 12 minutes.

Pull Aluminum foil with pizza back onto peel and set aside to cool slightly.
Slice and Enjoy....Guilt-Free!

Entire Pizza is ~900 calories
